Alan's Special Oatmeal Recipe
Alan’s special oatmeal - 4 servings
makes 4 servings oatmeal (or more or less as you like) - I use about 4 parts almond milk (or regular milk if you prefer) to 1 part oatmeal.
Ingredients
Almond milk (or other milk) 32 oz = 4 cups = 1 carton almond milk
Oatmeal - Greenwise steel cut quick cook oats * (or other as you like) - 1 1/4 cup
flax seed/ Chia Seeds/ hemp hearts - 3 tbsps each
pumpkin seeds - 1/4 cup = 4 tbsps
Raisins/walnuts - 1/2 cup each
Blueberries - 1/2 cup (or more LOL)**
honey - 1/4 cup (just estimate and pour in so as not to get measuring cup all sticky)
(note Greenwise Quick Cook Steel Cut Oats cook in 7 minutes and I think taste just as good as the regular steel cut which take 25 minutes or longer to cook)
** I use frozen organic blueberries from Costco or Publix frozen blueberries because they are always available but also use fresh if I can get them.
Cook oatmeal
- bring milk (almond or whatever) to a boil. Add quick cook steel cut oats (or other oatmeal) and mix. Turn heat to low and simmer for 7 minutes (or whatever time your oatmeal calls for - be sure to check directions because regular steel cut oats take 25 minutes); stir a few times as it cooks. Should be consistent but more liquid than you would think (that’s good because other ingredients will thicken it up)
To cooked oatmeal add the following:
basically all dry ingredients followed by raisins and blueberries (or any berries as you like) and honey or brown sugar if you prefer (1/4 cup)
add cut up peaches or apple or banana per batch as you like
(also note, I buy most of the ingredients at Costco except quick cook steel cut Greenwise oats and flax seeds i get from Publix)
Add cinnamon and/or vanilla to taste
Other thoughts
Store in Tupperware or whatever until you get ready to eat. Heat up in microwave for 90 seconds and add additional almond milk (or other milk) to get a nice smooth consistency that is to your liking. Cut up half banana is good at this point too (if you didn’t add extra fruit earlier).
Pecans can also be nice instead of walnuts but walnuts are a little cheaper at Costco.
